Rughetta-The Summer Green

Rucola or rughetta in Roman, arugula in Italian, rocket in English. Call it what you will, but this IS one of the staples of summer. If it’s wild and fresh, it’s peppery enough to sting the tip of your tongue.

Make a salad with it, ask for it on your pizza, serve it with tomatoes on bruschetta, or cook it with thinly sliced beef as Straccetti (little rags). Be sure to have your fill of this delicious summer treat because once the temperatures drop there won’t be anymore until spring.
